How do you like 8670 steel?
I bought it because it was available in 1/16 inch thick for small knives. It was simple to heat treat, hardened and tempered nicely. iI did destruction testing and made a kitchen knife (the most abused of knives) for my own use and it has worked very well. Edge holding has been excellent and easy to bring back a fine edge with a butcher's steel, like all high carbon steels it does take on a patina with use, especially with acidic foods.
