Baaaaaah! (Warty the sheep)

Unfortunately I didn't get to eat the head itself. I'm told the meat around the lips and eye sockets are the most desirable.

There's a great Mexican joint nearby, and my favorite thing there is the cabeza tacos. They roast a whole cow head then pull off all the meat and stew it all down overnight. Man is it good. The meat takes on a strong marrow-y flavor from all the bones. Mmmmmmm now I'm hungry!

I'll pass on the eyes though :barf:
 
When I lived in the Virgin Islands they sold Kingfish heads for next to nothing and id buy them up and boil them up or smoke them with onions, garlic, and local taters which were much like sweet taters but they were white but still sweet. Then you throw some big fat dumplings in the broth and cook them down. Once the dumplings are done you put them on the plate with a big spoon full of mayonnaise on top the head with a squeeze of lime and some habanero sause and let it all drool and drip all over the place. Man that was pure ecstasy! I think they were scotch bonnets but still pretty hot and very good for the head!
