The overall weight and packed bulk are the main drawbacks that can see so far for backpacking. Not so much of a problem for my canoe trips. But most of the alternative baking methods also have their drawbacks. This is not as efficient, but a heck of a lot lighter and smaller than the venerable Coleman portable camp oven. And the price really isn't bad. About $50 for the 7" "kit" that I got which includes pans and gripper. Closer to $40 without if you can use your own cookware. They are also available in 8" and 9" sizes ($60 & $70).
