This is a great everyday use knife. I have matched the handle with the cutting board. The width of the blade prevents your fingers being trapped under the handle when cutting. Curve of blade allows for chopping while holding the front of the blade on cutting board. Great knife for all your cooking.

Steel ATS 34, HT to RC 59 with Cyro, 3/32 thick, Blade 6" long with 600 grit hand rubbed, full flat grind to 0.02.

Handle is laminated bamboo matching the border of the cutting board w/brass pins 4 7/8" overall. Rounded to fit hand and a round grip is ground into the front of the handle to allow for a easy grip at the front of the blade

Cutting board is 10 x 13" end grain bamboo with a laminated bamboo border, It is finished with food grade mineral oil.

this looks nice. another idea would be to make a walnut or cherry end grain cutting board and handle. Walnut boards rock.
 
I got the green kick and knew of a company that had bamboo cutoffs from other work, so I got bamboo. My every day chef knife is cocobolo which I would really to have a matching board. I am trying to design a board and knive combo that could stand up on the countertop and not take up alot of room.

Also, why not some olive oil (not extra virgin if possible)?

There is someone on the net that makes various wood cutting boards that are gorgeous, and he swears by oiling with olive oil the FIRST oiling, as it will "harden" off as others do not.

Just wondering.... I don't like using petroleum products if I don't have to, and I dont like ingesting trace amounts of laxative!
