This knife has peaked my interest. Does anyone know how well this 0.082 thick convexed blade performs with slicing and food prep? What are the pros and cons to this knife specific to the convexed blade? There seems to be much more information available about the older version with the much thicker blade profile, but not much on the newer version.
 
I've cut apples with it in the past and just pulled one out of the icebox. It slices very thin, dices as good as any paring knife I've ever used and if I had the skill...it's capable of paper thin slices. I would say it probably excels at slicing/food prep.

I have one of the newer version as well, fantastic knife for food prep. It barely feels convexed except at the edge, so it slices as well as any paring knife. I use mine in kitchen fairly regularly and is my go to outdoors knife, especially for camp food. I can't recommend that knife enough.

I totally understand now. To me, this knife is a utilitarian dream come true.

Yeah, what everyone else said. It's an awesome knife and slicer. I was really disappointed when I found out the Modern Kephart that was just released a month or so ago was back to a .175 thickness. The real draw for me was the thin profile.
 
Oh that's sad. Anyone on the fence about one of these incredible knives needs to jump now while the .082 thickness is available.
