I thought I'd run through my daily kitchen tasks using the STS-3 and compare it to my kitchen standard - a Global.
Thoughts:
The good: The factory edge was satisfactorily sharp and I was able to push-cut through most everything. In fact, this knife cut best when push cutting rather than slicing.
The bad: The full convex grind would often get hung up, or suction into, thicker cutting tasks like whole onion or steak. This isn't so much a ding on the blade or it's sharpness just something to be aware of when using a think hunk of steel with a full convex grind.
Overall: I won't hesitate to make this my primary, use-for-everything camp knife. It slices sufficiently well (although not amazingly well) to be a kitchen knife and it has the heft to do everything else as well.
LifeBlade: I did exactly what you said and it worked out great! It took much less sanding than I anticipated and now it feels like an entirely better knife.
You all have been so helpful with the evolution of my knife. I have another question to ask of the experts here. I'd like to replace the screws and brass liners that mates the screws together with higher end parts. Preferably Titanium if not then stainless steel.
My knife is going to get wet often and I won't be in a position to break it down for cleaning/oiling and I don't want it to rust closed.

As a token of my appreciation here is a photo with my new firesteel which I've trimmed with a hack saw and filed the bottom smooth and round for ease of entry. The bit of paracord keeps it secure even once whittled thin.
I found the STS-3 has potential to be a great knife. I think the handle is a bit short, and sharp near the lanyard hole, like mentioned above.
The blade geometry is great, tall height, and convex grind make it a great cutter. I'd like to see this knife in CPMS35VN, no black coating, and a different lanyard hold.
Also, a different sheath, leather is great, but a differenty kydex than the current.

I removed the handle scales, sanded them down with wet automotive paper (as suggested by someone here) and they are now acceptably comfortable. I also replaced the factory sheath with the leather-over-kydex you see above.
