What about bead blasting a stainless blade for a dull non-reflective surface? With this be inviting rust?

That depends a lot on the beads ! Stainless steel should be handled only with materials reserved only for stainless steel. Other wise bit of carboon steel contaminates will promote rusting.

Good to know......I hadn't thought of that! Would the small depressions in the steel lead to rusting with normal knife care?

This will be my first knife & I guess I'm just trying to get around having to do a baked on coating.

I do a range of knives in S30V that i bead blast and they dont seem to be any worse than non blasted blades for rusting.
Cheers Bruce

Beat blasted surface can hold the oil coated on the surface better.
I do oil or wax coatingf on knives i use or keeping.
