Beans and Rice

Beans and rice..... mmmmmm.

Yeap , both can be a boring ride into monontany !

but... you get the benefits of doing rice dishes , bean dishes or rice and bean dishes.

My girlfriend makes BOMB fried rice , very simple with onions and bacon and yellow wax peppers , I make ham hocks and beans with different kinds of beans , bottom line is you can eat like a king for CHEAP.

Ham hocks n beans is an old staple in my family and ridiculously easy to prepare.
 
lacking testicles, try a ham hock, bacon or pork belly in the beans and rice as well, NOT macrobiotic, but really frikkin tasty....obviously, skim off the fat.

I like some refried or pinto beans mixed with the slightest amount of finely murdered onion, some fresh chopped tomato. Then mixed with a spiced mexican rice. Basically the stuff you get at el polo loco. I like that stuff.
 
Try having a little side-dish with your rice and beans to bring some interest and exciting flavor to your plate...










like a 16oz. ribeye steak!

Our neighborhood cooks dinner for a local homeless shelter once a month (don't let the "homeless" part put you off :-)

I modify the following recipe by using one chicken instead of two (one is plenty), and multiplying cumin and cilantro by 1.5. Sometimes I will replace the rice with barley.

You can eat it as a casserole and/or wrap it in a tortilla (salsa optional) for a chicken burrito.

Save the bones and boil them with carrots and celery, and season with salt and pepper--excellent soup.

The chicken ups the cost a bit, but it really adds to the dish. I always make two batches--one for the shelter, and one for us.

Chicken, White Bean and Rice

Ingredients:

2 medium onions, sliced
4 T olive oil
2 supermarket- or home-roast chickens, skinned, boned, meat torn in about 2–inch pieces (about 6 cups)
2 14.5 oz. cans chopped tomatoes
2 14.5 oz cans white beans (cannellini)
1 cup uncooked white rice
4 T fresh cilantro (less if dried)
2 T ground cumin
salt and pepper to taste
1 C chicken broth

Casserole dish: 1 half-size deep steam table pan (provided)

Preheat oven to 400 degrees. Add oil to skillet and cook onions until soft and translucent. Pour into casserole dish. Add remaining ingredients and mix well. Cover tightly with foil. Cook until rice is done. Start checking after 45 minutes.

Unfortunately brown rice is expensive but try a little by way of lentils, whole wheat and split peas in with the white rice. They add texture, nutrition and taste.
 
For a little variety, try Majadara, a middle-eastern lentil and rice dish:

Chop 2 large onions, saute in olive oil.

Boil water, add 1/2 cup brown lentils--simmer for about 20 min.
add 1 cup basmati rice, the sauteed onions, about a teaspoon of salt, and 1/2 teaspoon black pepper.

simmer for another 1/2 hour.

And if you want, Steven, you can put some testicles in there as well--pick whichever species you prefer. :eek:

and ENJOY.



Ya,ll made me hungry fer beans and rice so i just started the beans soaking.Mostly pinto,s with some,kidney,black eye pea,and a small amount of lima,s. And i yanked a BIG ol ham bone with lotsa ham left on it outta the freezer.Tomorrow,s dinner is gonna be good !

I put 4 cups!!!! of jasmine rice on the stove just now.( Gotta have some left over to go with the beans) And im baking a chicken.<<< also a good cheap dinner.

I learn't the joys of Rice pudding on our form 3 school expedition when I was 15. Our squad of 6 were stranded for days on a high hillside in torrential rain unable to pack and move so we were short of food, down to rice, sugar and dried milk (loads of fresh water). 30years down the line and I can still remember how good that was.

+1 to this recipe. Although it should be a +2 or 3 or 4(everytime I take it to work people are always asking what smells so good).
I just made a second batch today. I changed it up a lil bit by adding some other veggies. It's good stuff, I could eat it till I couldn't move, lol.

A can of chicken stock instead of water can go a long way ;)

ALMOST got that right.

Toss some chicken parts in a pot of water. Toss in some carrot, celery, onion cut up, too. Boil it till the chicken is falling apart and the water is now ... chicken soup.

Snack on the carrot and celery and onion as you pull the chicken off the bones. Pour the soup into containers for later on.

Make your rice with 2 cups of rice to 4 cups of chicken soup. While that is steaming, heat up some olive oil, add chopped garlic and onion. When the rice is done, mix this into it.

Add whatever beans you like, and toss in those chicken scraps.
