I classify my knives in two categories:
Carry: the higher-end, nice knives that I EDC and do light tasks with - like opening boxes, cutting line and such. My current carry is the Spyderco Paramilitary 2, I own two and they're my favorite knives ever - simply superb.
Beater: the knives that I beat the crap out of. If I need to carve large piece of wood or hack into something, I use my beaters. My beaters are usually in carbon steel because they're easier to sharpen and cheaper, so I can get a bunch.
