OK, normally I use 19c27 and A2 so slower oils are fine when I do stainless. I know that 1095 should be done in brine if your gutsy and in fast oil if not. But I only have a foot of 1095 and dont want to buy fast oil for such a small amount. Out of motor oil, mineral oil ect. is one faster than the others? I figure with 1095 the faster the better but I like the knife I have ground out and dont want to crack it using water. So... does anyone know the fastest readily available oil? I promise that if I start to do more with 1095 I will get some Parks. Thanks for any input.

Ok... guess that was a bad title. After all the info in Sam's water quench post I think I am just gona suck it up and go brine. If it breaks it breaks. I was guessing that lower viscosity oils would be faster but I am sure there are alot more factors in play.
