Becker Cooking Knives

I cook, a lot. I am currently using some crap IKEA knives that my girlfriend has....I hate them, with a passion. So I have been doing some research, mainly on chinese vegtable cleavers. I'm a minimalist, and only need 1 good cooking knife....but those things are spendy. Then I saw the Ethan Becker cooking knives....Becker? Sounds good to me...and the price point is perfect. Who has experience with these? Any review you can direct me to? Long use review? Do you love them?
 
LOVE THEM! Call Dale at TKC, he will ship out tomorrow. Price is awesome. They come sharp as hell. They hold an edge. I haven't had to sharpen mine yet and they get used A LOT. They don't have a block unfortunately. However I went to Harbor Freight and got a 2.99 magnet bar and they live on there.

I have given them as gifts to my mom, my sister, my aunt, my brother, and one of my best friends besides getting a set for myself.

If you are looking for a "do-it-all" knife the 8" Sanktou is it.
 
We love ours too. They are used daily and blew everything else right out of the knife block. Very nice knives.
 
Well, I'm sold. That's the last push I needed. Next pay check, cooking knives! Excited!
 
I have a set, and they're about all I use now for cooking. Can't go wrong.
Be careful. They are sharp. As in scalpel sharp.

Thats the one nice thing about the IKEA knives...if they were actually sharp, I would have no finget tips.
 
I believe RougeBowie even took his set into his restaurant and are used there.
When I worked at the restaurant I used mine there. Let me tell you, commercial kitchens are hard on some blades. But they survived and even impressed the chef.
 
I'm a big fan of Global knives and already have all that I need in the kitchen knife department but I have used the BK/ESEE knives at both of the gatherings I went to and would highly recommend them if you are looking for a good kitchen knife set. Like the other Becker products they may not be "the best" but you get a hell of a lot of knife for the price. They are really comfy in the hand as well.
 
I have every intention of getting a set myself. I've had my eye on them for a while but I think my fiancé will kill me if I buy them before the shower (there is talks that someone MAY have gotten them for us already). Waiting stinks and these cheap mickey mouse knives I've got from bed bath an beyond aren't cutting it (pun intended) ;)
 
If you're seriously interested in a "Chinese cleaver" type knife, I highly recommend the dirt cheap Thai made Kiwi 8" chef knife. The stainless steel blade is fairly soft, but the blade ZIPS through veggies & meat. It's my "go to" favorite kitchen knife. This knife sells for about $7 + $4 shipping from a certain website named after a large river.

They are knives, made to be used in the kitchen... That is about all you need to really know about kitchen knives :P
 
After having these since they came out, I can tell you they are great knives. I've stopped using every other kitchen knife I have, except for a paring knife. The chefs knife has such great balance and speed that I actually look like I know what I'm doing now! Now that my wife has started using them (long story there), she can finally tell when a kitchen knife is dull and it bothers her. These come really sharp, and touch ups just take a few passes on the Spyderco Sharpmaker fine rods and they are as good as new.
 
I have the set, but the santoku is the only one I use. Well, the little santoku as well. I been on a big stir fry kick, my kids even got me a wok for the celebration of me knocking up their mom, years ago. :D

Anyhoo, from chicken to pork to beef, veggies all, green or small, have gotten the business from mine. I do keep a 9" india stone in the kitchen, though. Learned that one from Uncle Cookbook. I hit mine a few licks before I get started. Never went dull during a meal, and is real easy to control.

The santoku pattern, Ethan's been using for years, but he was having to have it made in Seki, custom order all the way. I can honestly say, he's using these knives right now, bet you can find them in the drawer and dishwasher alike.

And, I can honestly say, I was there the night they came to be. And got hammered on Ethan's whiskey with Jeff. :D

Mine were hijacked last winter. Need to get another set. And a magnetic strip to hang them along with my 5, 15 and 24.
 
Nikki - looks like a nice knife set. I would suggest a steel as well, it's great for daily use to keep your edge(s) honed. I use the steel before each task, and only have to use my DMT setup when they really need sharpening, maybe 5 or 6 times a year. There is a great video ( I think it's Jacques Pepin) that has as great explanation of why you want your knives sharp so you don't injure yourself as well as why (and when) you should use a steel. I wish I could find the link....I'll try to and post it later. Good decision though on the kitchen steel, you'll never regret money spent on decent kitchen knives, IMO.

I was on the fence last year, thinking to give some away to family members who NEED decent kitchen knives.
Now, it's decided. Much better than decent, and the whole set costs as much as ONE of my Henckels... Gonna be a Becker Christmas. (Okay, I'm a little early.)
