Becker Greens

Man those look good Biscuit. My kitchen help makes greens from her grandmother's recipe. When they are about done cooking, she adds a couple of beaten eggs and stirs til they cook in. Some apple cider vinegar sprinkled on and a skillet of cornbread. Big slices of white onion and hot pepper relish on the side. Damn.
 
At the grocery store yesterday I noticed Collards in addition to Kale. Swiss Chard was missing. Of course there's always the usual Spinach. I like Beet greens sauteed with olive oil, salt, and garlic.
 
Any wilted lettuce fans?

A little romaine fried by tossing it in with the bacon when it's almost done, with a little chicken stock is a quick lunch around here. Sort of like greens, but instead of simmering for hours, its done in minutes. Actually we'll add romaine to almost any light chicken or beef stock based soup.

Yes he is!!! I've got folders full of folks I take pictures of! Amusement parks and Walmart are a few of my favorite places.
