When I used to order in bulk from Klingspor, they charged by the sq.in. The price of a 36X2" belt was half the price of a 72X2" belt, etc. If I needed a custom 2.25" or a 3.15" belt, the price was the same based on sq.in.
Reasons for knifemakers to stock different size belts:
1) You can use a 60" belt on a small wheel fork without having it stick out so far from the machine.
2) You can use a 90" or 132" with a large wheel and not have it almost rubbing the tracking arm.
3) 1" wide is great for finger grooves and finishing the handle right next to a guard.
