One other question...am I supposed to use some sort of lubricant on belts when grinding metal?

NO. If you do that you will just cause CRAP and metal debris to stick to the belt and your knife and it will be a MESS. 
When grinding on hardened steel however, it's the steel you want to occasionally cool off in some water (BUCKET) so you don't ruin the temper.
In the annealed state i guess it doesn't really matter how hard you push on the belt as the heat treating and normalizing will fix whatever the heck you did while grinding the knife.
