Benchmade Foray vs Valet (m390 vs 20cv)

I was looking to get a gentleman's knife and I kind of narrowed it to these two. The price difference is not a concern to me but I do not know enough about steel to know if m390 or 20cv is better. I currently own a 154cm blade and a s30v and I love both. So if anyone can inform me about which steel to go for, that would be appreciated. Thanks in advance.

20cv is a copy of M390 and are basically identical. I have a Valet that I enjoy, but it is a very small knife. I've never had a Foray, but it's probably easier to grip. Be sure to also check out the 484.
 
As mentioned, they are essentially the same alloy but made by different companies. I believe M390 became harder to obtain and was replaced with something more readily available.

They are both a great steel and will hold an edge for quite a bit longer than the other 2 you mentioned and one of the most 'premium' steels that Benchmade works with.
 
This is my preference, but I prefer knives that can actually slice well, especially gentleman's folders. The Foray's blade thickness is .137" or 3.5mm, and it's a saber ground blade. That won't slice an apple, it'll just wedge it. The 940 has a .115" or 2.9mm thick blade, and it won't even slice an apple, usually, just wedges. Thickness behind the edge will make a difference. The valet, by contrast, has a .100" thick blade, 2.5mm. I've owned one of those, it will slice an apple. Yes it's small, but only compared to other knives that are larger, really. I never felt under-bladed with it, and all I carry are knives that are considered "gentleman's folders."

To me, grace, elegance and class are the essence of a gentleman's folder, and a knife with a thick blade is everything but those, as it has to work harder to cut, which is it's job.
 
Both great knives with excellent steels. Go with the one that catches your eye, you won't be disappointed with either!
I just received a Foray yesterday. It might be a saber grind, but the grind is very high. It also has amazing action, was perfectly centered, free falls with NO movement and locks up stupid tight! Great knife that has some reassuring heft.
I really like how the scales leave a tiny bit of the liners showing. Gives it a great and different look.
Haven't had an issue cutting anything.
