Im not saying its the best, but here is a hunter/utility i just finished. Blade is 1095 forged, handle is pistachio wood, mortised tang runs to within 3/16 of the butt of the knife (to keep the strength of a full tang, but cut the wieght considerably).

A similar knife with Kenny Rowe sheath is $200.
