Not sure if you would consider H1 as "high end", but it's as stainless as they come! And the serrated H1 is truly awesome in Spyderco's Jumpmaster.

A little known knife I just ordered. Haven't gotten it yet. Colonial knife bushcraft series. I got the 6 and 4.25 models for $120 shipped. 154cm steel and black micarta handles. Designed by Abe Elias. Think they are discontinued but they used to sell for around 200 each from my research. Good luck

You need to specify which steels you mean by high end steels, and you need to specify what your primary uses for the knife will be. Otherwise you are asking people to read your mind. That rarely works out well.
