Best Bowie knife?

For $500 your best bet is to go custom. I'm sure there are plenty of reputable custom makers who could make you a nice bowie that fits your criteria for that price (or less).

Also though I don't own one I've been eying a few bowies from Mineral Mountain Hatchet Works.
 
It is truly hard to beat the "bang for the buck" with the Ontario SP-10 Marine Raider Bowie. Just sayin'. Around $52 + shipping or $61 to your door.



Buy what YOU want.
 
If you can find a used Matt Lamey or Charlie Edmondson bowie there is nothing better....I own both and can attest to their quality!!!
