Recommendation? Best "Budget" Kitchen Knives / Set Suggestions Please.

Check out Dexter Russel SaniSafe knives.

I like that the handles are sealed to the blades no place for gunk to hide.

They used to say dishwasher safe, but they no longer advertise that. They say they can be sanitized at high heat.

Mine definitely go through the dishwasher with only a few rust spots on some of them.

Took note of the comment about knife blocks as well, will take look at magnetic instead
For cheap magnetic bar to hold your knives, Harbor Freight has an 18" mag tool holder bar you can get for under $3 on sale. Works fine. Note that some stainless steels have enough nickel in them to make them non-magnetic, so wouldn't work with a mag bar.

If you're worried about scratching your knives on the bar, applying tape or a strip of edging veneer should be cushion enough.

If you sign up for the HF email list, you'll get a sale/coupons email every couple days. It's enough to be a bit obnoxious, but that's what the DEL key on the keyboard is for when you're not in the market. The 18" magnet bars are included in the email sale listings pretty regularly.

Just FYI and FWIW, I recently picked up a Chinese-style cleaver (Kitory brand) from "the big Internet retailer" for $10. Supposedly made from "German steel."
It has a thin blade (not a "chopper" for bones) but it is full-tang. Great for veggies or for thin-slicing cooked cold meats (boneless turkey breast, pot roast, etc.) and stir-fry components.

I sharpened it up and it easily got close to razor sharp, and it seems to be holding an edge so far for kitchen food prep duty...for $10 it seems well worth it.
(The main kitchen knives here are Forschner / Victorinox.)

Just to give an update, I've ordered a few from the Victorinox Fibrox range including 15 & 20cm chefs knives, paring knife, santoku and a small utility knife which should hopefully be here by the end of the week.

A big thank you to everyone for your input :)

Hope you have a blast learning to use them!

I've gifted a lot of knives to people in exactly this position.
After a lot of feedback, I can safely suggest...

Victorinox with the synthetic handles.
8" chef knife
3 - 3.5" paring knife
bread knife if you want it.

That should be all you need.
Reasonable prices on knives that punch above their weight class.

Ah, should have read on.
Great choice!

.... as now I need too learn how to cook 😁 😁
YouTube is your friend. 👍
One of the cooking channels I subscribe to is Internet Shaquille because the dude jumps right into the content without blathering on for the first quarter of each vid, as some other channels do.

And don't forget the many vids on using & maintaining your knives. So many that filtering out the chaff is the hard part.
