I searched on this subject and found nothing, so forgive me if this has been overdone.

What do you think are the best buys in knives?

My first impressions:

moras
SAK's (can't even begin to pick just one)
Byrd Raven
Spyderco Delica
CRKT M-16 series
Buck 110, 112, 119
Benchmade Griptilian
Ka-Bar fighting/utility

Its been done, but I keep reading and responding to them!

I'd add the Ka-Bar Dozier folder, really sharp and works great.

I've got a ton of blades, but I still think the Gerber Paraframe is the best knockaround blade for the $$....

I Know, you'all are gonna pick on me....

I've said it before, the big Timberline folder designed
by Kelly Worden is a truly great bargain at about 40 bucks
street price.

Built like a tank, with a fantastic fit and finish and shaving sharp AUS 8
blade, IMO it's far better than any of the comparable CRKTs, Cold Steels, whatever.

Only issue is that it may be too overbuilt for strength.

A few other other great deals (again; at street price) are the Native,
Delica, and Endura.

The SAKs as mentioned are a no brainer in this category

I'll also add the Blackjack Small Hunter, AUS 10 & a beautiful
cocobolo handle for about 40 bucks or so. Leather sheath too.
With the Kraton handle you can pick one up for about $25!
Super deal in a small fixed blade knife.

R. H. Forschner kitchen knives, too, are best buys for sure.

And then there were the Beckers...
They were some of the "best buy" knives ever,
especially the 7 and 9.

Not previously mentioned in thread .....

Tactical / Utility
If you like the waved feature, then the waved Spydercos. Think about how much you'd have to pay for an Emerson.

CRKT makes titanium-handled knives at very affordable prices. The S-2, although discontinued, is a slammin' deal at the forums -- regularly sells at $55 off the forums, which is pretty much insane for a Titanium framelock in ATS-34. Compare the pricing to the Titanium M-16 and the Titanium Salsa.

I have heard good things about Opinels, though I don't own one myself.

Kitchen
   on the Forschner line! Amazing, but to be expected from Victorinox :D

I'm not sure I would say the Leek is a best buy for $40, even in the AO / Dress knife category. They're fun, popular, and I like them, but even so ...

i'd put the Native with it's Wal-Mart pricing and S30v in over the Delica

Sadly, not available in all Walmarts. Just the ones that do well when it comes to knife sales.

Anything from Spyderco's Byrd line is a bargain.

Also, the traditional Ka-bar Knife is excellent as a large fixed-blade bargain.

Some SAK models are getting up there in price. But a lot of them are still good bargains.

Benchmade Monochrome.
Victorinox SAK's.
Spyderco Delica/Endura.
Benchmade Griptilians.
Kershaw Liner Action.
Buck 110.
Kershaw Blackout.
Byrd knives (I don't own a Byrd yet, but plan on eventually getting a G-10 Cara-Cara).
Jim

Byrd Meadowlark
Byrd Cara Cara
Spyderco Delica
Anything from the Spyderco Salt series (H1 is simply amazing steel with so many good properties)
Spyderco Native
Victorinox SAKs
Vicotorinox Swisstool Spirit
Opinels
Sodbusters

Kershaw Avalanche.

S30v, G-10 handles, and made by a company that you know you're getting quality from. All for about $80.00.
