Obviously, there will be lots of good options, but this has been a couple of my choices in this land where I live with chin-high snow, and well below freezing temperatures. You mentioned that you are wanting a folder; last winter I carried a Blade-Tech Wegner Professional Hunter-Lite with blaze orange FRN scales ($59.95). Hooked to a belt loop lanyard, I had no intentions on losing this knife while on the snowmobile, dogsled, snowshoeing, cross country skiing. Finding the orange handle was always a joy too when it was packed in with my other outdoor gear...and it really contrasts with the snow when you need to lay it down while working. It will be with me this winter too.
I rarely travel anywhere in the bush without a small puukko of some sort. The all wood handles are always a pleasure to use on those numb-chilling days, and, few blades are as easy to sharpen and maintain in the bush as are the Scandinavian grinds.
Few folks run around up here without a Leatherman tool also.
