What do people think are the best production knives made in Europe?

I'll start with:

Fallkniven,
Mora,
Victorinox,
Boker,
Opinel

Just so you know...Fallkniven knives are made in Japan, and Bokers Plus and Magnum range are made in China. Many manufactureres are located in Europe, but make their knives elsewhere. Pohl Force is another example. They are located in Germany, but produce their knives in Taiwan. Their EOD range is made in Italy though.

But to answer you question, Extrema Ratio and Lionsteel are both located and produce in Italy, and both make some great knives.

Thanks! I was not aware, more research is required. I will look at the two Italian makers you have given me. I am just on the Italian border now so may make a trip over.

There are quite a few fixed blade European knife makers putting out good products...

Helle - Norway
Enzo - Finland
Rosarms - Russia

The best production knives I've seen out of Europe are from Italy. Mora's are undeniable quality as well.

Thanks for all the excellent suggestions. I may have opened pandora's box as I've already ordered an Enzo and a Fantoni, I'm very tempted by a few Klotzli's but I am having trouble finding them within the country, I may have to take a trip to switzerland, the savings on sales taxes will pay for my journey!

Victorinox!
Wenger
Boker
Helle, Karesuando, Marttiini, and a dozen other Scandinavian brands.

I have two from Maserin of Italy. One is pretty good and the other is excellent.

Rosarms - Russia
I ordered two of these last year, and had no idea what tanks they would be.

These are a great bargain considering the very low prices. But htey aren't as nice as other more expensive brands, IMO. No question you get your money's worth from a Mora though.

Don't forget the many European custom makers who sell here on Bladeforums. Just picked up this custom hunter from forum member Bona, a maker in Poland:

One that I like and even prefer over Mora 510, but do not get much attention is the Hultafors HVK. Also no mention of Opinel yet, many love them, but I do not have any personal experience.

Hultafors HVK was too expensive to produce in Sweden and today they are made in China, but it's not a bad knife.

Lionsteel, Italy
Ahti, Finland
Friedrich Hartkopf, Germany
Otter Messer, Germany
Hubertus, Germany
Carl Schlieper, Germany
Kizylar, Russia (ok they´re from Dagestan, that should almost be Asia if I´m correct)

... these are the ones that come in mind quickly and haven´t been named yet (I think)

Well, Severnaja Korona are from the European part of Russia.
I believe they are from S:t Petersburg, but marketed somehow via Kizlyar.

I don't own any of them, but the pics show incredible craftmanship.

Mikael - thanks - now I´ve learned something new... but it´s somehow logical the Ural is far far away...

+1 for Enzo, excellent knives at a very reasonable price. I own a Trapper (fix blade) and a Birk (folder), both of which outperform many of my higher priced knives, customs included.
