Swibo are just as good if not better. I'll use either.

What is the price? I have never heard of Swibo. Is it approved for commercial useage?

Many posters to this thread seem to ignore this very important aspect, sanitation and safety when referring to knives used for food prep, or animal dressing, or fish cleaning.

I don't and a S30V knife filled with E-coli germs when I'm filleting my fish is not good!.

Think I'm gonna save up for a Cabela's alaskan guide Buck fillet knife with s30v or look for another with the same steel instead of buyinfg a bunch of moderately good knives. Just bought a normark.That and the other martiinni's will work for the time being.Thanks for all replies. If anybody knows of any other fillet knives made of s30v or vg10 or such steels please list on here.

Swibo are the trade knives of Wenger of SAK fame.

I don't know the exacts but it may be possible to make the case that they are Victorinox too now as I think Victorinox bought Wenger a couple of years ago.

I only became aware of them in the early 90's when a GF of a friend was a kitchen doodads sales rep. They might have been going for yonks by then for all I know or have been very new.

I'm guessing you are Stateside and I don't know the prices there. Just for a look at the range though have a peek at this.
