I also switch hands when sharpening but I always have the spine away from me.

Think I will give your method a try just to see how it feels.
I generally get good results when sharpening knives with major curves but I have to inspect the edge more frequently.

Also I cannot have a consistent scratch pattern on the curve cause I am not comfortable going perpendicular on the curve portion.

I use the lift of the spine as a gage to set the edge angle. DM
