Best Kitchen Kives

Who do you feel makes the best kitchen knives? Henckel, Wusthof, Messermeister, Global, or any others?

. The K1, and K2 are AWESOME!. That VG-10 stainless steel is excellent, and the handles on these two knives are VERY comfortable.

I second the Murray Carter recommendation. I have a Muteki paring knife and one of his forged knives. Both are made from laminated steel and are very sharp. The forged knife is the sharpest knife I've ever owned. My wife complains about the "cheap" knives not staying sharp but the Carter knives are so sharp she is afraid to use them!
 
Victorinox/Foschner line, great uers and low $ to boot. Leaves ya with more $ for custom knives.

My wife is a certified executive chef, has owned and used just about every brand of cutlery, and she can't say enough good things about her custom Tichbourne carving set. George's designs are well thought-out, with features that make them great for prolonged use and performance. Plus he will add some nice personal touches if you like.

I'll put in a vote for wusthof. I've got a full set of the things. My girlfriend refuses to touch them because she's convinced she'll cut her hand off.

these things cut through any food I throw at it like it's hot butter.

I would recommend a Handmade product by George Tichbourne or Murray Carter, the cost of their knives are only slightly higher than some of the top of the line Prodcution Brands. These Makers have both been targets of articles that praise their craftsmanship in Kitchen Cutlery. I'm sure you would not be disappointed!

My wife and I have a set of top-of-the-line Henckels. The performance of these knives are average at best. IMO, you pay a price for the name, and nothing else. Edge holding is fair to poor. Sharpening them is fairly easy though. If I knew then what I know now, I would have passed the Heckels over and continued looking for a better kitchen knife. They are not 'junk' knives, they are simply over priced for thier performance abilities.

From all mentioned here I have a pair of Fällkniven kitchen knives only. Frankly I never have been partial to cooking. But now I can't wait when my wife will ask me to help her to cut or chop something in kitchen

Sabatier knives are quite nice, but my favourites are Grohmanns

The only blades I've found to be better are the Henckels 5 star professional series.

Henckels are good too (don't like the handle though) but make sure you buy the "two man" ones - those are the only ones made in germany and are of a higher grade and thicker steel.

Not that I use kitchen knives, but I'm the one who sharpens them at home. That includes Global, Wusthoff and Henckels. Arranged in descending order

Soon I'm gonna get Fallknives K1 or K2, or both, I think those should hold the edge similar to Globals, since as I know the blade steel is the same VG-10, or may be even better

Who makes a quality pair of poultry shears in the $30-40 range?

Sorry, don't know about the shears. About the knives, Carter has a great rep., but haven't used them yet. George Tichbourne's - I have had the pleasure. Fantastic stuff, more than worth the price, but you must like your knives on the strong and heavy side, as I do. Thomas Haslinger also makes some beauties, a little lighter but also better than any of the production stuff and well worth the price.
Noone has mentioned Hattori. They are absolutely superb and beautiful, and there have been several posts about them before. Not cheap though.
The new impregnated titanium stuff from Boker, I think, certaily sounds interesting.
For productions, not much to differentiate, but I like my Gerbers.
 
When I wear out my mixed set of Sabatier, Global and Henckels...I will be very interested in some of Mr. Tichbournes stuff...but it may take a bit...
