Best Kitchen knife around $50 ?

I use a 7 inch santoku from Füri. I believe they are an Australian knife company. It works well for me although I haven't had a chance to give it a good workout yet. The thing is kinda ugly, it has orange handles and is endorsed be Rachel Ray. Don't laugh at me but I figured she is kinda cute, why not try her knife? :)

I'm curious of what you all have to say about Füri knives. Anyone heard of them?

There was a write up on these knives in the latest Knives Illustrated that made them sound pretty good too.

I love this Kershaw Wasabi 7 Inch. This knife is about 30-50 dollars depending on where you get it. It out cuts many knives costing much more.

Ditto. The Wasabi is my favorite "Kitchen Knife".
 
A friend bought me this Chinese Cleaver from China Town. It takes a good edge, but is easy to sharpen. I bust up frozen food with the back edge, chop, slice and scoop with the edge. I use this knife more than Chef knives, or any other type of knives. I guess the paring knife is the one I use most after this Cleaver. I rinse it off and hang it by a hook near the sink. Really wish I knew who made it. I am curious to know what steels are in it. It is made by a Japanese firm and all the lettering is Japanese.

Then I found the thing on Ebay for $10.50, which was a lot less than what my friend paid.

I was able to score one last year for a buddy from JohnFJensen's website....he and his wife love it :thumbup:

I have one of the discontinued Spyderco Santokus as well. That thing is AWESOME!! Blade is very thin and slices through everything with great ease. It has become my wife's favorite kitchen knife. Handle is comfy and it sharpens up real nice!!:thumbup:

I've got a spyderco santoku and its pretty great although I kind of like chef's knife style a little better.

The Victorinox (Swiss Army Knife people) always get really good reviews for their 25-50 knives, particularly with the fibrox handle, what keeps the cost down. I've had a paring knife from them and it was very useful.
