Best Knife Blade Material

For cutting rope, cardboard, tape, paper, wood(shaving), and many more.

My choices for cutting these materials would be D2, VG-10, 154 CM or S30V. All of them would be easier to sharpen than ZDP-189 and any steel is going to need to be sharpened from time to time. Personally, I'd choose D2 and get it sharp but not polished. I've found that D2 works better for me when it's left a bit "toothy".
 
Honestly, there is no such thing as " Best Material " for knife.
If there were, there would not be any more collectors, and most knifemaker will be out of business, and rest assured that the "best material" will cost more than it's weight in gold. And everyone will thinking of possessing the " One knife to rule them all".

There are so many different conconctions of steel or rather, blade materials
It all depends on the application, for good percing? good slicing? good rust resistance?good asthetic? good edge retention? easy to sharpen?

You gain some, you loose some. First of all you need to know what's your application. eg, For extreme hardness, you loose a bit on brittleness, or it might be prone to rust etc.

I do have a document of a detailed studies on the various types of knife steel, do leave me your email so that i can send to you if you are really intrested in the techie stuff.

I'm not going to answer your question with: "there is no answer", that's almost as bad as answering: "use the search function"!
I decided to not believe anything anyone said about S30V being bad, and bought a bunch of knives with S30V. I love this steel. It is ultra hard, and full of carbides. It is hard to sharpen, but that's the point of a good abraision resistant blade steel. I also like D2, but some D2 is very hard to get sharp. VG-10 is nice, but not quite as good as everbody cracks it up to be. I like 154CM, AUS8 or AUS10 are very acceptable, 440C is nice but maybe a little soft, Most all of the Swedish steels are nice. S30V is about the best of the bunch for me, if you buy any premium steel, get a nice sharpener to and you'll be happy.
 
What's a blade that's hard, but not as much brittleness as the ZDP-189?
And can hold a sharpness for a long time.

S30V is very hard and abraision resistant. S30V has a tendicy to sharpen up real sharp, then go to about 85% sharpness and stay there for a really long time. It holds a nice useable edge for a while. I don't think you'll be disappointed with S30V.
 
Case C.V without a doubt. What fun is it owning a pocketknife if you never get the chance to sit down with a coffee, some light music on and have an afternoons sharpening and honing?

From my personal experiences and reading reviews, charts, catra test results etc....

For Edge Holding S110V, S90V, ZDP-189, CPM-M4 in that order

All will be harder to sharpen than other steels, M4 will be easiest but has the least rust resistance, for a stainless ZDP-189 will also be less stain resistant than most other stainless steels. S90V and S110V are pretty hard to find and expensive and won't be as tough as M4.

Best rust resistance goes to H1 at the expense of edge holding.

Easiest to sharpen would be something like 1095 or sandic 13C26 or 14C28N IMO

Toughest would be CPM-3V which also has good edge holding, but so far I haven't seen a folding blade made in this steel, though Spyderco is working on one called the "Tuff", unsure of release date. S7 (SR77)is the absolute toughest steel I know of, but again no folders I've heard of are made from this and its at the expense of edge holding and isn't stainless.

IMO Best all arounders (good in all categories, but not best in any) S30V, M390, CTS-XHP, D2 you get a little better edge holding than S30V but a little harder to sharpen and less rust resistance. CTS-XHP is like a more stain resistant D2, but again harder to find on the market.

Other good all arounders-154cm, Vg-10, N690co

I'm missing some steels, like 440C which some love, I haven't tried it and haven't really been interested in it. As well as 420HC, Aus-10, Aus-8, etc.

Yep it is a pretty old thread..... 40 months. :D

But to answer your question.

In a 'nut shell'.... A "lesser" steel with the proper heat treat will outperform a "super steel" with a crappy heat treat.

whatever victorinox use in their swiss army knives blades hehehe....

since all i need is durable, stain resistant and easy to sharpen knives...
