i saw it many years ago and I did not remember name of movie or most of detailes, but still remember knife fights. It was so real, not "movie" knife fight.
You have to see it, plus couple really good actors there.

ummm i liked the sevreal kinda long figth scenes in the begining and end of gangs of new york.
 
I have to go with Exposure as well. Though the frontier techniques in The Patriot were awesomely exposed. I do love the way Segal moves but Jet Li gets it done.
I have to thank you all because I could not remember the name of Exposure and I sure did not know it as High Art.
 
OK, I forgot the name, but it was made in the 1950's. Not a knife fight, but a scene. Richard Widmark is tied up to a wagon wheel (he plays a murderous Trapper). A violent and evil Lawman is beating a young boy, a member of the wagon train who took pity on Widmark. A hatchet becomes available, and Widmark throws it with conviction and focus, whacking the crooked Sheriff right in the head! End of Sheriff... I saw this as a kid and have been in love with throwing hatchets ever since.
