Best Knife for Field Dressing Big Game?

I use a Superknife with a hooked carpet blade to zip the skin open - cost $8; and then use a Cutco fish fillet knife with a 6 to 9 inch adjustable blade - cost $30; to skin out the deer and wild hogs I shoot down here in Florida. I quarter out the meat like Mr. Pinetree, and then take the meat to be processed to a meat house. Nothing fancy but the knives work like a charm. I carry a Ka-bar USMC combat knife while hunting just in case I have to finish off a hog in the dark while bowhunting.
 
My big game is gutted within ten minutes of hitting the ground. My favorite Folder is the Buck lite and I like the Grohmann belt knife and KOA Alpha Wolf for fixed blades although I have used to many different knife to count.
