what would be the best way to put a protective coat on carbon blades(1084 1095 etc) maybe gun blueing or gunkote??

I was looking at fail zero like they use for the bolt's on ar-15's until they told me they put it on at 750 degrees.

The best and easyiest I have found is FESO2, same etch that everyone one uses available at radio shack. I use a dilute solution and wipe it on and it will oxidize the surface, seems to protect really well and provides some scratch protection. My shop utility knives are finished in this manner and none have any rust even though the get no love other than not wiping off the WD40 overspray.

You can do electroless nickel plating, which is very corrosion resistant.

Slow rust bluing. I did that on my first knife blade. Came out beautiful, and I've left it (I'm ashamed to admit) kicking around alternatively in my shop or in my kitchen now for about three years. Not a spot of corrosion or brown rust.

A bit labor intensive, but very very appealing to the eye, more durable than almost any other "blueing" method, and not liable to ruin your HT like any of the high temp methods.

If you have the option of integrating your HT into the coating process, you can speak with a local industrial coatings company about nitriding, carbonitriding, diamond like coatings, and all sorts of other neat options. They'll likely be more than happy to work with you in helping determine exactly how to integrate one of their processes into your HT (most such companies have incredibly nice HT equipment on hand, and will work throug the process with you) but the price tag is going to be very much prohibitive!
