The camellia oil works fine for me (avail. from bladegallery), also it's safe for the sheephorn. I keep a light film covering the whole knife, while stored.

The American Edged Weapon Museum in Intercourse, PA uses bowling alley wax. I believe it is made by Butcher. They have lots of carbon steel and no visible rust. I've used mineral oil, but this needs reapplication every year.
scfishr, that looks like some great stuff, the Kurobara Camellia oil. It has historically been used by Samurai on their swords? I speculate that Camellia oil would be "food-safe" as well. A web search on it shows a lot of history and uses, including cosmetic, health, and nutrition. Verrrry interesting! I wonder exactly how it acts on metals?
