BEST SHARPENING SYSTEM?

I just purchased an Edge-Pro Pro after owning just about every sharpening contraption out on the market (Razor's Edge, Gatco, Lansky, DMT, Spyderco 203 and all their ceramic benchstones, etc etc.....). I haven't received it yet and was interested to know other owners (Apex or Pro) opinions fare. Ben Dale of Edge-Pro is very nice - he spent quite a while with me on the phone - very informative, honest and helpful. I'm pretty good at touching up edges, but lack the skill and patience it takes to put on a really fine edge. Any and all comments are welcome.

I, also, have used just about every sharpening system to come along. I now use the Razor-Edge coarse & fine bench stones and leather strops. I have been considering getting the Tormek Sharpening System as I'm going to start sharpening knives on the side and I won't have the time to devote to sharpen lots of knives in a hurry. Have you heard about the Tormek?

I just used my search engine and got lots of info. Also, Woodcraft, P.O. Box 1686, Parkersburg, WV 26102-1686 sells them for $399. Their phone # is 1-800-535-4482 (customer service). I have heard some positive things about them but would really like to hear from owners! Hope this helps!

I've been using the Edge-Pro Pro for about a year now and am a true disciple of this system. I've been in the restaurant business for 18 years, and believe it or not I never was able to pick up the knack of getting a consistent edge by freehand sharpening. The Edge-Pro is simple to set up, easy to use and produces an unfailingly consistent edge to your blade. Your kit also includes a video to show you exactly how to use it, which is nice to actually see the device being used. The only bothersome part of the system is the fact that you will mar the finish of your blade on the platform that your knife rests on, but this is easily remedied by taping the blade before you start. I think that you'll be happy with the system and be amazed at the results you get right from the start. I never knew how sharp my knives could get! And my experience with Ben Dale was the same as yours, very patient and eager to talk with me, he even customized my kit by substituting some of the finer tapes I didn't need in my kit with some extra medium and fine grade stones. He's a good guy. If you plan on using your kit often, I'd advise you to get the carry case also, it keeps all the stuff tidy!
