Best Slicer??

I use my PM2 for cooking and I am very fine with it.

I think you may have better slicers in the spyderco's portfolio but the PM2 is for me a good compromise between slicing and EDC capabilities.

If you only need is slicing, I agree with the other recommandations and I think you better have to look at the stretch, caly or cento
 
My best slicer would be the FFG Delica 4. Super thin, FFG, tall grind, etc. Second best would (belive it or not) the Tenacious, for the same reasons as the Delica.
 
I would say the FFG Endura, Military and PM2. When I get the edge on my ZDP-189 Endura just right, it is like a laser.
 
I vote for the Stretch. The FFG is great on that knife, especially combined with the blade shape. IIRC, that's the knife Sal designed for his own all-around use. There's a description about it somewhere, but its amazing, and VG10 is very corrosion resistant.
 
Based on the blade shape and grind, I think the Nilakka would be an excellent slicer. I use my GB for slicing a lot as well.
EDIT: Sliced up some sharp cheddar with the nilakka, works awesome.

One of the best food prep knives from spyderco has to be the Resilience. Since food prep is not super hard on a knifes edge; you could probably look past the crappy steel.
 
My wife tried Spyderco Gayle Bradley one day for slicing and food prep,now GB sits in the kitchen all the time,excellent slicer.:)
 
I do like the idea of a leaf shaped blade for slicing (and my M4 manix 2 is my favorite knife ATM) but the endura With its long blade, light weight and low price point Has won me over

I have been looking at endura regrinds with a thinned out FFG since i asked here and they seem to be pretty awesome slicers

I am still going to give my BD-1 manix that i believe i have coming next week a fair shot

Now to pick a steel.. VG10, H1 or ZDP? I know H1 is going to be most Corrosion resistant but have heard unless its full SpyderEdge it dosnt hold an edge like VG10?
 
I just picked up an AG Russell Hocho. Specifically designed kitchen folder. I sharpened it on my Edge Pro to the same specs as my Lum large Chinese. The Hocho actually felt a little sharper and slid through paper a little smoother than the Lum.
Anyway, I was prepping 6 lbs of beef for some chili and wanted to do some comparison. The Lum had it all over the Russell in all areas even though it is a bit smaller. Maybe it's the VG-10 that has an advantage over 8Cr13MoV sliding through protein. It certainly wasn't the edge.
The Lum is now my favorite, most capable folding prep knife.
And the chili was awesome!

You're right, H1 won't hold much of an edge for long in plain edge form. I'm going to try and sell you on a Military, especially if you're looking to get your fancy regrind on, that would be right up your alley.

It might not be as light as the Endura (4.2 oz to 3.6), but it would still be a backpack beast for you. If you look hard you can still find a Cruwear Military out there, so get your regrind done, throw some Cerakote on the blade and hit the trail!!!

EDIT: I know that this would be the least wallet friendly scenario, but I like to aim high. :D
