Using Victorinox for a while now and not unhappy. Just looking for other options available that are not stupid money. Prefer something that doesn't have a plastic handle like the Victorinox.

Not looking to spend $60 per steak knifeAll my kitchen knives are Tojiro VG-10. Steak knives included. Very happy with them.
I'm open to other handles, but if plastic I'd like something with more heft than my VictorinoxI picked up a block set of those Miracle Blade 3 knives, you know the ones that cut through a shoe and a brick? We only use the steak knives. Got it for my parents back in like 1999 and they are still going strong. You can get a 4 pack of just the steak knives on the big river site for $25, but they have plastic handles. The Miracle Blade IV gets worse reviews, and I can't tell if the handle is plastic or not? Looks like a 3 rivet handle, but plastic?
If you insist on wood handles, HENCKELS Solution Razor-Sharp Steak Knife Set of 8 on the big river site may work, $45 for 8. They look like wood handles, but I can't tell and the description is vague.
Old Hickory 7504. These are/were carbon steel knives so they required the user clean and dry them immediately after use. So, that means no soaking in the sink or slipping them into the dishwasher. At one point these were cheap enough that I was picking them up a dozen at a time. These made great starter sets for kids headed off to university who needed to set up a kitchen from scratch. I have a serrated Tramontia I bought at a gun show. Excellent. Wish I'd bought a couple of more.Tramontia do some good ones. Wooden handles.
