Best steak knives that do not cost a fortune?

I have seen online some really nice stuff from France that was not expensive.
The ones that can go in the dishwasher though mostly all are gonna have some kind of a plastic handle.
I am currently using the Italian ones that I have been selling Sanelli .
The ones I have been using or not necessarily a steak knife, but they are pairing knives, but they work very well as table knives. I like the idea that you can put them in the dishwasher.
Most all Knives are going to get dull when you cut on a dinner plate because the dinner plate is harder than most steel. So with that said it’s gonna be hard to maintain if you use them a lot you better off with the less expensive, softer, steel, much easier to touch up sharpen

For what it is worth I have a preference for straight edge bladed steak knives. I can sharpen a serrated blade but my habit is to steel the steak knives were using every time to true the blade. I then touch up the blade twice a year on my current Henckels steak knives. These weren't cheap but they are in daily use so I think money well spent. Touching up a serrated blade is not that quick. I also think that serrated blades tear through meat causing additional loss of juices. At one point Smoky Mountain Knife Works had a good, stainless knife set that they sold in their store. I bought a few sets for family and friends. I'll see if I can find a link to that set. https://smkw.com/hen-rooster-4pc-steak-set

I use morakniv basic 511s for everything.
11 dollars a knife and still zip through most meat with haste, only sharpened once and these knives were bought over 2 years ago
