Best steel I have ever used for skinning/processing game is a Busse Elmax Steak Knife (short version)..just got it in a trade..and frankly, I am amazed..I know that's a word you hear a lot around here, but take a minute to go here to see what I've put this through so far...and it still shaves..

A knife of same make/model has recently skinned 12 deer and is still shaving...yes, I said twelve deer..more detail on the Busse forum under a thread about Deer season..search Elmax, and you'll find it..
