Best stones to learn to freehand sharpen with?

I got the 1k & 6k arashiyama stones from chefknivestogo.com. $45 and $64 respectively. They have a TON of stones there. A mind boggling amount.

I was looking at the Beston 500 grit stone or the Bester 700 grit stone also.
 
0.7K is almost 1K so I would get 0.4-0.5K grit instead. HarborF has a 4 sides diamond stones for dirt cheap, it would covers all sub 1K need.
 
I would recommend something in the 220-320 range. A Nubatama stone from the Ume line would be my personal pick.
