Olive oil is OK for the short term; for a "using" knife.
Longer term, it goes rancid and loses its protective properties.
I've found that a better choice for food prep knives is food grade mineral oil,
mentioned above by frontline29.
I made the switch to mineral oil as well. My wife said she got funny looks at the checkout, since mineral oil is also a laxative...
