Best thing to prevent rust?

Olive oil is OK for the short term; for a "using" knife.
Longer term, it goes rancid and loses its protective properties.

I've found that a better choice for food prep knives is food grade mineral oil,
mentioned above by frontline29.

I made the switch to mineral oil as well. My wife said she got funny looks at the checkout, since mineral oil is also a laxative... :D Don't go licking your knives off!

Spray on RemOil and mineral Oil seem to both be effective and I own both. Can I wipe the white coating off my knife after I spray the RemOil on?

Why even bother with the RemOil if you're going to be using mineral oil?

In any event, sure, it's a good idea to wipe off any excess - leaving just a thin coating.

The important thing is to protect the blade against oxygen by sealing it out with the coatiing of oil.

AG Russell sells a product called Rust Free, that is what i have been using for years,

It's very effective, and very reasonably priced as well.
Silicone based rather than petroleum based.
I've used it on fixed blades in long term storage with great results.

Camillia Oil works a little better than olive oil. And it's probably better for you than mineral oil.

EEZOX by far for rust.

I second the EEZOX. By far the best rust inhibitor on the market. There's a lot of discussion of it on the gun forums and several good tests have been done with bare sheet metal, buckets of water, several name brand gun cleaners, rust inhibitors and the like, and lots of time to see what works. EEZOX always comes out far ahead of anything else, especially RemOil.

I also agree with taking your knife out of the leather sheath when storing it...especially if you live in a humid environment.

Weapon Shield and good old Break Free CLP. Break Free also makes a product specifically for storing firearms which is primarily a corrosion inhibitor.
