I find Buck knives are a great value. My favorites are the 300 series and the Vantage select knives.
 
Have to agree with the Manix 2 trans blue, awesome knife for the price. I have to get me one of these Rat 1's lol.
 
The Benchmade Griptillian is an excellent value as is the Mini Griptillian.
 
I'd have to say Manix 2. Used ones go for $65 sometimes and you can't get more knife than that for the money.
 
Mora fixed blades are a great value. For folders both the spyderco delica and native are great deals for around $50.
 
Yeah Manix 2 with G-10. I don't know if there is a knife with more packed into one package at around $80.

Just ordered an Ontario Utilitac II. Same quality as the RAT1 but beefier.

Also considered a Kershaw Cryo and Clash but I like AUS8 better than Chinese alphabet steel.

The tried and true SAK.

Gerber Big Rock is a decent and cheap camp knife out of the package.

The new Zanduco folder has a nice price point and the reviews so far have been pretty good.
 
For a folder id go with a buck for a fixed blade grind down an old file and as long as you don't get it to hot it will stay pretty hard if you don't have an old file 10 to 50 cents will get you one at almost any yardsale or thrift store can get one
