What do you consider to be the best western style production forged 8-inch chef knife for under US$350 ??

I've hear great things about the Henckels Bob Kramer in 52100, but I haven't actually used it. I generally prefer Japanese style cutlery.
 
Maybe the Shun Kaji Western Chef's knife. SG2 steel. Western profile and a thicker blade than typical Shun knives.

Al Mar Ultra Chef

Have a buddy that's a professional chef and this is his favorite knife at home. VG-10 damascus and cocobolo from Al Mar. Tough to beat. I think he uses Wusthoff pros at work, a much less expensive blade.

I use an Ontario Agilite personally.

For the most part , he's right on. I'm not a fan of Wusthof. Agree 100% that the Vic. knives are a great value for home use
never put them in the dishwasher, oil the handles a couple times a year { I have the Rosewood handle ones } & you can give them to your grandkids.

I've had these for 30+ years

The PBS show America's Test Kitchen has YouTube Vids where they test products. The best chefs knife they have ever used are the Kramer 8" chefs knife by Zwillig and the $49 Victorinox Swiss Army. So there ya go. keepem sharp
 
New Viper (Italy) Chef's knife looks interesting. Not available yet.
 
You can pay a lot more than a Victorinox, but you won't get a much better knife at 10times the price. It's a favorite of pros the world over. With the left over money get some Shun stones to restore the edge...
