Beveled Disk on the disc grinder?

I see that allot of people that do flat ground knives like using a beveled disk for working on the knives but doesn't the 1 degree bevel make just a little bit of a hallowing effect?(or I'm I thinking wrong)

Yes they are a cone. You cannot get a true flat or it is very difficult to do so. If you are worried about it kicking back or up, it has never happened to me. You can grind with the 1 degree disc then flatten by hand. Or just not worry about the slight hollow and move on. I have been grinding on a flat disc for over 23 years now. Like I mentioned I have never had an out of control kick up/back. I have slipped a couple times and ground a knuckle or 2. It is a matter of getting used to the set up. I am not saying the 1 deg disc is no good, to each their own. If you want to use one then by all means. Just be aware it does not produce a true flat surface.
 
For a 1.5" wide blade, a 1° arc will make a .001" deep hollow grind....that is one thousandths of an inch....basically imperceptible without a comparator. A toolroom surface plate is only accurate to .0002".
 
I find it very user friendly and as Bladsmith said, the hollow isn't enough to detect- it's way less than margin of operator error, and another benefit is that you don't end up with a secondary pattern on the far end of a blade if you're doing something where the scratch pattern matters for appearance.
That said, I tend to use the flat one and grind kind of off to the side, most of the time.
 
I agree with everybody so far, LOL. :)

If you can only have one disc, then I'd probably say to go with a flat one as you will use it for stuff like flattening scales.

For grinding blade bevels, the taper is pretty nice. I have both in my shop.

The thing you have to keep in mind here, is that the tapered disc is only going to create a hollow if you have the blade fixtured and keep it in exactly the same plane the entire time. That's not how you grind a blade on a disc though. You constantly move it around, up/down, angled this way and that... (at least I do!) so the taper is not an issue at all IMHO.

What is really important is that it is variable speed and reversing!!!!!!!!!!!! :)
