Sorry to hear about your grandfather, but thankfully he's still alive.
mine went out installing a homemade flagpole in his front yard ( pretty fitting I guess that a man who fought for his country during ww2 would go out installing a pole so he could fly his countries flag ).
I ended up with the knife that was in his pocket, it was a worn out vic Classic but luckily I was able to simply put its yellow scales on a like new one.
Personally I see too much life left in those blades not to want it back in working order so it could go in my pocket if this was my grandfather's knife.
I think there are a few people who could get this knife going again for you so you could carry it sometimes, otherwise you could just display it and get a good condition used one to carry in honor of him.
