I hunt birds...a lot of them in a given year. I am lucky enough to have a good picking machine to use on ducks, geese, turkeys etc, which helps. When going to finish cleaning, I generally split them up the back partway or all the way to allow for gutting and cleaning well. This can be hard on a perfectly good knife, particularly when hunting with other guys... it is not uncommon to have 15 geese to clean. Shears work, but not as well as I would like.

I am considering making a tool for this splitting and have some ideas, but thought I'd ask if anyone had heard of such a thing. I'm open to ideas, and pics would be great. I guess what I have been thinking of was kind of an oversized old-fashioned can opener, sharpened, with a long handle.

I know there are guys here that have seen quite a bit and I'd like some advice.
 
I use my "chicken cleaver" which happens to be made by Russell [Dexter-Russell.com].It's 7" long .That works well.
If you clean birds immediately when you finish hunting they won't have a strong gamey flavour !
 
I'm a bird hunter and raise poultry and other than a cleaver or large butcher knife a meat saw works best for me.
I have a butcher knife thats about 15" long and 3/8" at the spine. Makes quick work of them backs
