There's actually good reason to sand to a mirror finish (which you should do tip to ricasso). You're putting microscratches into the steel, and as you can imagine, those can retain more moisture the bigger they are, and will thus make it easier for rust to take hold, and also there's more for the material you're cutting to grab onto and cause friction. I'd sand to at least 600 grit, and probably take it clear to 1000 or even 2500. Here's my BK2 FFG in one of the earlier stages of sanding. You can see there's still some tooling marks:
