I was wondering(so now you are too) if there is anyone who offers A custom coating for knives as an after market service. i.e.- black coat,bead blast whatever?

Quite a few custom finishing shops will handle blades. Check out powder coating in the yellow pages. Also, many motorcycle, machine shops, and coating shops will do hard chroming.

Oh, I would also like to add that BryCoat ( http://www.brycoat.com/ ) has been particularly prompt with replies ot my emails. I haven't had anything coated by them, so I cannot comment on quality, but the service so far has been great (and they were even polite about pointing out a few of my mistakes). And, as a big bonus, they offer the king of the ceramic coatings, AlTiN. In a few months I should have some comments about the quality of their coatings.
