blade finish?

I've built several knives from pre-made blades and recently aquired a blade blank that requires stock removal for the blade. I really don't want to polish the blade to a high shine but would rather leave it with a matte finish. Is this finish hard to aquire for a beginner? How do you do it? Thanks, Mike
