Interesting video. I never thought of it like that. I know that my Emerson Commander can baton very well for a folder. I think the same concept applies as was talked about in the video. Less wear on the cutting edge after the initial inch or so.
that wouldn't be a chisel grind, but a saber grind. a chisel grind is what is commonly a l/ vs a V...so its only ground on one side.
but yes, the shoulders at the edge of the grind help to wedge the wood apart better. this same wedging property makes it less efficient in cutting things like cardboard where the entire side of the knife is in contact with the material. good and bad about everything...
You are absolutely right, so is siguy on correcting you on the name of the grind. If there is no secondary bevel, that kind of grind is also commonly known as a scandi grind. And yes, once you get to the shoulders you will not hardly use the edge when you baton.
