I work in an office environment, and so don't need anything huge. 2.75in seems like a great compromise of size, utility and handle length. I would say 2.25 -3in is all that I need for anything in the city.
The 3" range is the lower limit for me, and I have carried up to 4" in the past. You do get some looks when you pull out a 4" folder. Just for kicks I might occasionally carry my 4" CRT m21. But as a few have mentioned, even though they may not need a 3" blade, the smaller handles that go with a smaller blade hinder the usefulness so I carry a larger knife to get larger handles.
When wearing a suit or slacks, I usually carry one small blade, a mini grip, PT or delica for example. When wearing jeans, I dont mind having 2 knives so I go for the bigger or heavier blades, a cqc7, an endura, pacific salt or spartan along with a SAK to pull out when around anyone I dont know or trust.
A 3" blade or shorter will keep you on the good side of the cops as a rule but I do carry up to a 4" blade in certain circumstances -- hunting, ranch or farm work, woods/forest/desert time.
Under 3''. I don't usually have a need for a larger one. For me, when I have something larger than say a delica, it just isn't as comfortable. Most of the time a medium stockman or peanut takes care of my needs.
I have a split personality on this. One one hand, a smaller blade is more handy for opening boxes and run of the mill EDC stuff. Something like a Delica. And as a general rule I am always trying to minimize my EDC loadout. On the other hand, I like a big blade like a Military on general principles of manliness. So I go back and forth, but tend to err on the side of a bigger blade.
I also always have a Victorinox Classic SD on me for public use, loaning (rarely), etc.
For work-related use in public, I use a 2.75 to 3 inch folder to avoid drawing too much attention. I personally prefer a longer blade up to 3.6 inches for EDC as they offer more reach and comfort than a 3 inch folder.
i carried a 25cm OAL balisong in my pocket comfortably. my 12-spring SAK champion is definitely not for body carry and has to stay in either a clutch bag, suitcase or toolbox.
Thinking about it, I agree with those who are carrying a larger folder partly for handle comfort. I definitely like a longer blade for general tasks, but the added handle length is a big plus, too. It's why I can carry the PM2 even though it has a shorter blade -- the handle is excellent!
