Blade Scratches

What grit did it come off the grinder? What grit are you sanding with? To me it looks like your gonna have to step a few grits to get them out then work your way back up.
 
Have to work back from coarse up to fine grit. Once the grinder scratches are gone, the rest is easy. That's why a bit more time before HT is a good idea. I look at it like painting, the paint is the easy part, the prep is the PITA part. After HT, it takes a lot of elbow grease, noseoil, & sandpaper.
 
Those look to be 60 grit scratches.

Flatten it out again with a few passes of 60G then 120G then till you are happy.

Remember we aren't taking scratches out, we are lowering everything around them!;)

I will post pictures shortly. I am up to 320 grit. For kitchen knifes what grit do you stop at?

I hand-sand to 180 or 280 *before* heat-treat. Else you're in for a whole lotta pain.
 
For monosteel kitchen knives I would go at least to #400, otherwise there will be too much drag and the steel will be hard to clean(and it will patina/rust too easily as the scratches will catch dirt and water and are too deep to wash/clean easily). Optically I find the finish of around #800 most appealing and smooth enough for the use. Once you go past #1000 you will start to polish the blade. You can of course do that, but you really need to have zero scratches from the coarse grits, otherwise the result will look tacky. One interesting trick is to go up to certain grit (say #1000) and then go one step back just for the final finishing strokes (#say 600) with very little pressure..
