I tried a knife in 1095 tonight. I haven’t been doing them long, but had decent luck with 1080, so I figured I would give the 1095 a try. Used water for the quench, and heated the metal in a 2 brick forge. When I quenched, it cracked at my plunge line. The edge was about as thick as a nickel.

As they say, them's the breaks... o_O That's a risk quenching in water. Others more knowledgeable than me can correct me, but maybe all you can do is do the best you can to avoid stress risers if you want to quench in water but even then you'll still lose some to the knife gods through the tink of death.

Heat treating 1095 properly in a 2 brick forge is quite dufacult. Then add a water quench and you where allmost 100% guaranteed to have a failure.
